I love this cereal, which is basically chopped and toasted nuts. I chop the nuts in my food processor. Add the ingredients listed below. You can use honey, I may even try maple syrup next time, for the sweetener. Pour into a baking sheet (I use parchment paper as well) then cook on low heat (225 degrees) for about an hour (or until it is no longer sticky). I use my toaster oven, in a bigger oven it would take less time.
One serving is 35 grams based on my ingredients below. I love this cereal with a few pieces of dried fruit and milk. There is not a lot of quantity (in order to keep calories in line), but it is so delicious! It can also be sprinkled on salads or yogurt!
Ingredients:
- 60 g Raw Pecans
- 60 g Sunflower Seeds
- 56 g Pumpkin Seeds
- 56 g Raw Almonds
- 56 g Raw Pistachios
- 28 g Shaved Coconut
- 56 g Macadamia Nuts
- 24 g Coconut Nectar
- 6 T Almond Butter (102 g)
- 2 t Vanilla
- 1 t Ground Cinnamon

This sounds delicious! I think I eat my weight in nuts every week. They are filling, delicious, and have lots of good fats and nutrients. A wonderful way to start the day!

Thank you! Yes, I am supposed to avoid gluten so the stuff I have at home is pretty much gluten free. It also tastes great on yogurt and salads! 🙂
