I love this hot oatmeal! I was eating plain steel cut oats, and loved them with fruit. When I tried to cut down on carbs and increase fiber and protein, I experimented with adding different seeds, as well as Coconut flour and Tiger Nut flour. These flours are great because they add fiber, create a great texture, and add a bit of sweetness and additional nutrients.
Once the cereal is mixed, make sure to cook it long enough for the oats to cook. The steel cut oats I get at Costco take four minutes in the microwave to cook. So I cook mine four minutes, and use water. I also generally add fresh cut up apple, and dried fruit of my choosing. Experiment with how much water you like, depending on how thick you want it. Probably about one cup. Once it is cooked, if it is too hot, I will often add a few frozen berries or cherries. Keep the fruit under control, because calories add up fast. This is extremely delicious!
