I try and eat gluten free. It is not easy. And fortunately I do not have serious side effects from eating gluten. But I have tested a weak positive for Celiac Disease.
I made one change to the recipe; I added dried fruit (about 1/2 cup). I did soak the fruit in water for a short period of time. I added the six eggs and cooked it for about 40 minutes. I did not add the savory seasonings. It is not sweet, but oh so good. I add butter, coconut oil, or even pureed berries or fruit on top and serve. .
Because the ingredients are primarily nuts and seeds, as well as eggs, it has 5 grams of protein per serving. The carbs are low (4.4 grams) and it has 1.8 grams of fiber per serving (according to the website).
If you want to try something new, tasty, and very healthy, it is worth the time. Yum!
